As I was scrolling through Twitter, I came across a tweet that stated, “Vegans don’t have any good snacks”. I looked at my screen appalled by the fact that people believe that vegans can’t eat good food. Believe it or not, we can eat more than carrots and celery. There are popular chip brands that are vegan, along with granola bars, sour patch kids, and pretzels. Although the list is lengthy for amazing vegan options, my personal favorite is vegan nachos. By adding all the veggies, they become a filling snack that leave you feeling satisfied and stuffed. So here I am providing you with the world’s best vegan nacho recipe. Don’t forget to thank me later!

Ingredients:

  • 1 bag of Tortilla Chips

  • Two cups of Daiya Cheddar Cheese

  • 1 bag of Morning Star’s Vegan Chorizo (found in the frozen section)

  • 1 Tomato

  • 1 Yellow Bell Pepper

  • 1 Yellow Onion

  • Vegan Sour Cream

  • A little Olive Oil

  • 2 tbsp of Hot Sauce (brand of your choice)

  • Salt/Pepper

  • Diced Jalapenos

  • *Other toppings of your choice: Salsa, Guacamole, etc.

Instructions:

First, preheat your oven to 350 degrees. Lay the tortilla chips on a baking sheet and sprinkle the cheese on top of the chips (you can do more than two cups if you like your nachos extra cheesy). Second, chop up your vegetables and drizzle a little olive oil on them. Season them with salt and pepper and put them on top of the nachos. Don’t forget to sprinkle the nachos with the diced jalapenos. Then, put the nachos in the oven until you believe your cheese is to the ultimate melting point. There isn’t a set time because some people like their nachos crunchy, while others like their nachos soft (just make sure to keep an eye on them while they are cooking). As the nachos are finishing cooking, dump the vegan chorizo into a microwave-safe bowl along with ⅓ cup of water and heat it for five minutes. Set the chorizo to the side until the nachos are done baking. After taking out the nachos, top them with the hot sauce, sour cream, and vegan chorizo. 

You now have the most amazing nacho recipe ever. The best thing about this recipe is the flexibility and simplicity. The recipe is especially flexible because you don’t need all of the ingredients to still leave with a tasty outcome; it’s one recipe where you don’t have to stress about forgetting an ingredient. It’s also simple in the fact that it is very difficult to mess up nachos. So, anonymous girl on Twitter, take that! Vegans can eat real food, and good food at that.
