I had never understood the hype surrounding a warm bowl of soup in the winter months; that is, until this semester. It was a chilly day in Ann Arbor, and I had just returned to my apartment after a long day of classes. My roommate had a large pot on the stove top, boiling with what appeared to be some sort of soup base. I asked her what she was making, and she responded, āChickpea Soup.ā Hearing it the first time, it did not sound like the most appealing thing I had ever heard, but when she offered me a taste, I could not turn her down. She poured some of her freshly made soup into a mini bowl and handed me a spoon. I took a spoonful, and I genuinely believed it was one of the best things I had ever tasted. The warm broth complemented by the noodles, vegetables, and kale, topped with parmesan cheese was just what I needed on a chilly day.Ā
Ever since that tasting, everyone in my life knows about this soup. I have made it for my friends, and I have sent photos while making it each week to my family at home. Since the winter months are approaching, I thought I would share the recipe for my favorite soup. Especially as college students, a recipe that does not require a ton of time or ingredients, all while being delicious, healthy, and comforting is just what we need to end the semester on a positive note.Ā
Chickpea Soup Recipe
- Step 1: Start to boil a small pot of water for pasta so it’s ready for later! (small noodles: Acini de Pepe, Pastina, etc.)
- Step 2: Blend 1 can of garbanzo beans (blend with the juice)
- Step 3: Add blended chickpeas to pot in addition to one box of vegetable brothĀ
- Step 4: Bring to a boilĀ
- Step 5: Add seasonings of choice (salt, pepper, garlic powder, Italian seasoning, etc.) and a small scoop of minced garlicĀ
- Step 6: Add one potato (diced), a can of marinated chickpeas (TJs Greek chickpeas), and a container of sliced mushrooms to potĀ
- Step 7: Simmer/low boil until potatoes are soft/cooked through
- Step 8: Reduce heat, add handfuls of kaleĀ
- Step 9: Add cooked pastaĀ
- Step 10: Serve and ENJOY āŗļøĀ
When the winter months bring cold temperatures, soup might be just what you need to not only warm you up physically but warm your heart!
