5 Healthy and Easy Breakfast Recipes

Mornings can be pretty chaotic with all the clothes flying around and trying to get all your work together for school, but it can be even worse if you are trying to figure out what to eat for breakfast as well. A healthy breakfast can go a long way, and a breakfast that is both nutritious and simple to make is what everyone needs to get a great start to the day. Here are some healthy and easy breakfast recipes to prepare the night before so that your mornings will be just a little less crazy and a whole lot healthier!

  1. Double Berry Breakfast Parfait

This parfait is the perfect breakfast to have if you are in a hurry. Prepare it the night before and it will be ready for you in the morning! The fruits and yogurt combination will give you all the nutrients you need and is definitely a healthier choice than pancakes or waffles.

Ingredients:

  • 2 cups plain Greek yogurt

  • 1 ½ cups sliced strawberries

  • 1 pint fresh blueberries

  • Honey (optional)

  • Cinnamon (optional)

Directions:

  • In a mason jar or a bowl, begin with a layer of ¼ cup of Greek yogurt

  • On top of the greek yogurt, add a layer of strawberries, then blueberries

  • Repeat the layering process until yogurt and berries are gone

  • Add a drizzle of honey and a sprinkling of cinnamon to yogurt layer (optional)

2. Avocado Toast With Egg

This appetizing breakfast is definitely healthy and is a much better option than simply eating butter and toast. The egg on top is the perfect touch and it only takes about 5 minutes to make!

  • 2 eggs (fried sunny side up)

  • 2 slices of toasted bread

  • 1 small avocado

  • 1 teaspoon lime juice

  • Sea salt and black pepper

  • Parsley (optional for topping)

Directions:

  • Prepare toast and fried eggs

  • Peel and mash avocado with the lime juice, salt, and pepper

  • Spread avocado on each slice of toast and top each with a fried egg and add seasonings

3. Chocolate Chip Greek Yogurt Pancakes

These delicious greek yogurt pancakes are a light and healthy breakfast option, perfect for all your pancake cravings. The greek yogurt adds some extra protein into your diet and is a nutritious way to start out your day!

Ingredients:

  • 2 cups white whole wheat flour

  • 2 teaspoons baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 cup vanilla Greek yogurt

  • 1 cup milk

  • 2 large eggs

  • 2 tablespoons oil

  • 3 tablespoons honey

  • 1 teaspoon vanilla extract

  • ½ cup mini chocolate chips

Directions:

  • Heat a griddle to medium heat and spray with non-stick cooking spray

  • In a large bowl, mix together the flour, baking powder, baking soda, and salt

  • In a separate bowl, mix together the greek yogurt, milk, eggs, oil, honey, and vanilla

  • Add the dry ingredients to the wet ingredients and mix

  • Fold in the chocolate chips

  • Scoop the batter from the bwl and drop onto the griddle

  • Once the top starts to bubble and the edges look set, flip and let it cook for another 1-2 minutes

4. Cinnamon Apple Overnight Oats

These overnight oats are sure to satisfy all your apple cinnamon needs. Just prepare it the night before and it will be ready for you to eat when you wake up. These oats are quick and easy to make and can be served both cold and warm.

Ingredients:

  • ½ cup Silk Almond Milk

  • ½ cup whole grain oats

  • ¼ cup plain Greek yogurt

  • ¼ cup unsweetened applesauce, or freshly grated apple

  • ½ teaspoon cinnamon

Directions:

  • Add all ingredients to a container with a lid

  • Fasten lid and shake until combined

  • Refrigerate overnight for at least 3 hours

5. Berry Yogurt Smoothie

This tasty smoothie is a creamy blend of blueberries, blackberries, and bananas. Not only is it an extremely simple smoothie to make, but it’s also delectable!

Ingredients:

  • ¾ cup fresh blueberries

  • ¾ cup fresh blackberries

  • 5.3 ounce package plain Greek yogurt

  • 1 cup vanilla soy milk

  • 1 whole banana

Directions:

  • Add all of the ingredients to a blender

  • Pulse for 30 seconds, stir and pulse for an additional 30 seconds

  • Pour into two glasses and serve immediately or refrigerate until ready to serve

These five breakfast recipes will hopefully make your mornings a little less insane and will give you a boost of energy for the day ahead. They are simple, quick to make, and most importantly: full of flavor! A healthy breakfast is more important than you think and these are just a few ways to keep you in shape and make your mornings run a little bit smoother.
