Rise and Shine With These Quick Healthy Breakfasts

This article is written by a student writer from the Her Campus at Scranton chapter.

Being a busy college student one of the most important meals of the day is your breakfast. Being “hangry” is a real thing. In order to avoid this and stay focused and active you have to have some energy early in the morning. Eating breakfast does not have to be a huge hassle. It can be hard to find something that will fill you but also be healthy. Living off campus has taught me how to be efficient in meal prepping and avoiding the sugary snacks you often feel a need to grab on the go. Some of my favorite quick breakfast recipes are down below. Enjoy and get eating!

Peanut Butter Banana Overnight Oats

              ½ Cup Rolled Oats

½ Cup of Milk of Your Choice (almond milk is great)

              1 Teaspoon chia seeds

              Dash of Cinnamon

              2 Tablespoons Peanut Butter

Combine all ingredients in Mason jar or bowl and stir

Top it with bananas and a little extra peanut butter

Cover and refrigerate overnight and enjoy in the morning

Scrambled Egg Tacos:

2 Eggs Scrambled (salt and pepper to taste)

              2 Pieces Turkey Bacon

              Half an Avocado Sliced

              2 Whole Wheat Mini Tortillas

Banana Pancakes

              1 Banana Mashed

              2 Eggs

              ¼ Teaspoon Cinnamon

These 3 simple ingredients are combined in a bowl

and stirred to make such an easy and yummy pancake

alternative. Cook in pan until browned on each side.

Feel free to top with some peanut butter, syrup, or

fruit!

Berry Power Smoothie:

              1 Cup Frozen Berries

              1 Handful Spinach

1 Cup Water or Almond Milk

1 Scoop Protein Powder (Vanilla is Good)

Blend it all up and enjoy!

Good Morning and Happy Eating!
