Cruelty Free Cooking: Three Vegan On-The-Go Breakfasts

If I hear someone say that breakfast is the most important meal of the day again, I am cutting my ears off. I will tell the truth: I’m not getting out of bed and making breakfast for health, I’m getting out of bed for the noms. On those days when I am in a rush and need to run out the door, I reach for these options.

1. Smoothies

Okay, so this one most people would think to be vegan but many smoothies you will buy from a fast food place will be full of sugar and fat which is something you don’t want to be slammed with first thing in the morning. Some places even add ice cream; you’re buying a smoothie, not a milkshake! When making my breakfast smoothie, I like to start with a base of almond milk to make it creamy and get some protein first thing in the morning. My favorite combination is two handfuls of fresh baby spinach, frozen cubed mango, and a little drizzle of agave to add sweetness. After blending it up, all I have to do is screw on a lid and run to class. Any combination of plant based milk, frozen or fresh fruits, and fresh veggies will make a quick breakfast to leave you powered all day.

2. Anything but Eggs on Toast

People insist that eggs are a great way to start your morning because of the protein packed into them. The truth is that you can get plenty of protein and other nutrients from other options. My favorite is to spread almond or peanut butter on toast with sliced banana on top. One egg contains 6 grams of protein while a serving of peanut butter contains 8 grams. If you want a savory option, avocado on toast is a popular and easy option to make.

3. Overnight Oats

Pinterest and Instagram have exploded with recipes of overnight oats. Lucky for you, the recipe is so easy, it won’t turn into a #pinterestfail. To make the oats, dump an equal ratio of uncooked oats and your favorite kind of milk (I prefer almond with mine) and put in the fridge overnight. You can mix it up with whatever you want. I like to add a little bit of vanilla and top with nuts and chopped apple in the morning; I’ve even mixed in chai powder and vanilla extract to make chai latte flavored oats.
