Healthy Oat Pancake Recipe To Make January Better

Hands up if you need a warming, nutritious and delicious recipe to keep you going during January? (we do!) Who wants the easiest possible breakfast recipe? That not only taste amazing, are quick and simple to make, but are also actually really healthy? Who doesn’t love pancakes in the morning?

Prep time: 5 mins

Cooking time: 5 mins

Makes 5 small pancakes at 100 calories each

 

 

To truly take your breakfast to the next level then you have to try this recipe:

1 cup oats (we like jumbo oats)

I very ripe mashed banana

50ml water or dairy free milk

Flaxseed or chia seed eggs (for both simply mix 1-2 tbsp with 4 tbsp water and leave for ten minutes to thicken for a healthy egg substitute.)

Coca nibs or dark chocolate chocolate drops

 

This recipe is so easy and simple it will make you really crave some pancakes!

1.       Simply blend together the oats with the bashed banana and some water or dairy free milk to blend.

2.       Stir in the chia seed or flaxseed egg to make a smooth consistency

3.       Finally, stir in the coca nibs or chocolate drops

4.       Pour out pancake dollops onto a warm frying pan having used some form of oil- try coconut rather than butter or olive oil!

5.       Turn over occasionally,

6.       Put onto a plate, allow to cool slightly, and enjoy

Top tips: try adding nuts or dried fruit instead of chocolate or smoother the pancakes in berries and maple syrup for a fulling nutritcious vegan breakfast!
