12 Fun Recipes to Make During Quarantine

While you’re stuck at home, why not try out those recipes you’ve saved and never made? My friends have helped me compile this list of 12 fun recipes to try out during quarantine!

French Toast Pancakes

My sister and I tried these french toast pancakes from food social influencer @broccyourbody last weekend, and they are amazing! They are super easy to make, but they do take a bit of time, so they are perfect for a Sunday morning. First, you make regular pancakes however you want them, then combine an egg, milk, cinnamon, and vanilla in a shallow dish. Dunk one pancake at a time into the mixture, then cook in a skillet for one to two minutes per side. Top with butter, maple syrup, and fruit!

Tomato Pesto Pasta Bake

Since I have been home, my parents have been not-so-lightly encouraging me to cook dinner for our family. In search of an easy recipe that my whole family would enjoy, my friend Julia recommended this one to me! She said it was “the best thing [she] has ever made, it was so good.” I am really looking forward to making this one!

Whipped Coffee

Whipped coffee has been going viral on TikTok and Instagram! Unfortunately, I have not had the chance to try it yet, but many of my friends have! This recipe, from @nabelanoorhome on Instagram, combines two tbsp of the following: instant coffee, sugar, hot water, and a dash of cinnamon. She then uses an electric hand mixer to whip the mixture until it forms fluffy peaks. Other recipes I have seen on the Internet say you can use a whisk to mix, and my friend Leila who made this said: “it’s an arm workout with the whisk, but if you don’t have a hand mixer, it is absolutely worth it!” She also said, “it is the only way that I’ve been drinking coffee during quarantine!”

Cinnamon Apple Cake

This is another super fun recipe that my friend Aniko sent me! She said, “it was fun because it had unusual ingredients, like greek yogurt.” This recipe is great to make during quarantine because it can be made mostly with ingredients that you probably have in your house, like traditional baking goods and an apple! It also involves a sugar glaze made from powdered sugar and milk. Top it with a cinnamon crumble and this cake is to die for!

Healthy Crunchwrap Supremes

This recipe, also from @broccyourbody on Instagram, is a healthier version of the Taco Bell Crunchwrap Supreme. You can choose whatever kind of meat you want and mix it with a bunch of spices, including salt, pepper, chili powder, paprika, oregano, cumin, and a bit of cayenne pepper! For the “crunch” part, you can either cook a flour tortilla in a skillet with some oil or use tortilla chips. Top this layer with avocado, shredded lettuce, and tomatoes, then fold it in a tortilla, and cook it in a skillet with oil until crispy!

Cheese-Stuffed Garlic Parmesan Pretzels

These cheese-stuffed garlic parmesan pretzels sound amazing! This is another Buzzfeed Tasty recipe that my friend Julia tried. This recipe is also super easy! Simply roll out pre-made pizza dough, cut it into strips, fold mozzarella into each of the strips, and fold into a pretzel shape! Mix butter, garlic, and parsley, and then spread onto the pretzels before putting them in the oven for 20 minutes! Julia said, “these were so fun to make as a little treat for yourself…they did make me feel super unhealthy, but they were so good!”

Basic Vanilla Cake

This is a great recipe to make because it uses ingredients that many people already have at home! Also, if you’re like me and haven’t been able to find all-purpose flour at any grocery store, you’re in luck because this recipe uses cake flour instead! The frosting is a basic buttercream. Since this cake is pretty basic, dress it up with some fun decorations!

Starbucks Refresher Dupe

Since many Starbucks stores are closed at the moment, here is a dupe for a refresher drink! Add one cup of strawberry lemonade and one tbsp of grenadine (which is a type of sugar syrup) to a full cup of ice. Top with strawberry slices and enjoy!

Peanut Butter Banana Brownies

Peanut butter, banana, and chocolate—is there a better combination? This Buzzfeed Tasty recipe can be made by combining two mashed bananas with sugar, butter, and vanilla—then whisk! Add flour, salt, and cocoa powder, then whisk until incorporated. After pouring the batter into a pan, place balls of peanut butter onto the batter and swirl them on top of the batter. Bake for 25-30 minutes and enjoy!

Gluten-Free Cookie Skillet

This is a gluten-free take on a sweet classic! This recipe uses almond flour instead of regular flour. It also uses a nut butter to add flavor and decrease the amount of sugar. After combining the ingredients, place in a skillet and bake for 15 minutes! Serve with ice cream for a delicious quarantine treat.

Sour Cream Coffee Cake

While sour cream and cake may not sound like they go together perfectly, I assure you, they do! My mom made this recipe yesterday morning, and waking up to the cinnamon smell was truly delightful. This coffee cake was really good, and not too sweet for breakfast! This recipe takes 1 hour and 40 minutes to make in total, so it is perfect for a weekend morning!

Financiers (Almond-Browned Butter Cakes)

My friend Allie told me about this recipe, and I can’t wait to try it! I had never heard of financiers before, but they are basically just small butter cakes. They have a great almond flavor, and don’t use a ton of sugar! Allie said she liked this recipe because they aren’t too sweet and they are super easy to make!
