When it comes to meal prepping, it is something that I preach as being one of the best things you can do for yourself. There is no better way to be sure of what you are putting in your body and it helps you save a lot of money in the long run. If you are someone who has food allergies, it is one of the best ways to feel safe about your food. However, it is so easy to get overwhelmed when it comes to preparing meals. It can be difficult to know where to start! Here are some of the easiest foods that you can meal prep.

Lasagna

It is something that freezes well and if you make right it can be super healthy! As with all meal prepping, you need to plan things out. Lasagna can take a whole day to make but it can give you at least two week’s worth of meals if you portion it correctly. I would suggest making two at a time as the majority of prep is with the ingredients and not the cooking time. Load this up with veggies and use vegan cheese to make it extra healthy. Then all you need are some freezer bags and you can put the rest in the fridge to use as a dinner after a long day. This is my favourite of the pastas to meal prep and it is the most satisfying.

Eggplant Parmigiana

Again, I usually opt to make this with vegan cheese for a healthier meal. Honestly, you can never go wrong with veggies as meal prep. This dish is somewhat of a comfort food for me; when I’m having a bad day and don’t know what to eat, this is what I pull out of the fridge. It is also great in situations where you haven’t really had a chance to eat all day, as it is super filling.

Quinoa and Beans

Some quinoa with kidney beans is such a simple dish to make! It is loaded with nutrients and is something that freezes so well. I cannot count how many times I have pulled this out of my freezer when I felt like I needed to eat something a little healthier but I just didn’t have the time to cook a nice lunch or dinner.  If you feel like you’re getting sick or super stressed, eating healthy becomes even more important so you can get well. Having something in your freezer that you know is a tried and true healthy option will leave you so happy that you decided to meal prep!

Overall, the key to meal prep is time. It takes time to plan out what you want to be eating and time to make your chosen meals. These are foods that I know I will eat time and time again, which is why it works for me! You need to be able to find foods that you know you will turn to in order to make meal prep worth it. A couple of hours on the weekend can save you countless hours during the week and help break those unhealthy habits of eating out or getting delivery!
