Being a college student, it is difficult to find time to make meals that are healthy, afordable and delicious. Meal planning is crucial when shopping on a budget because it eliminates the possibility of wasting food. Printing a cute meal planning guide like this one will save you time spent at the grocery store while also saving you money! Here are some recipes to add to your meal plan.

Breakfast

1. Banana Oat Nutella Muffins 

This recipe from Chef in Training is great because you can bake them on a weekend and have a quick breakfast or snack for the rest of the week! The bananas in the recipe help keep the muffins moist so you don’t have to worry about them drying out on you. Plus, who doesn’t love Nutella? 

 

2. Greek Yogurt Lemon Poppyseed Muffins 

Lemon Poppyseed Muffins are a clasic. Greek yogurt was substituted for vegetable oil in this recipe from Creme de la Crumb, adding protein in place of unhealthy fat. These muffins also make a great grab-and-go snack or breakfast!

Lunch

1. Ravioli and Vegetable Soup

3. Salads

Alright, so salads are a pretty obvious choice for eating healthy. This awesome article from Hello Glow tells you how to make the perfect salad! There are so many different variations you can try – there’s something out there for everyone! Tip: To make your lettuce last longer, throw a dry paper towel in the container after you open it. This will absorb the excess moisture and prevent it from browning as quickly. 

 

Dinner

1. Stuffed Pepper Soup

With just a few simple ingredients and 30 minutes of your time, you will have 6-8 servings of this delicious soup! With all recipes, try to substitute with lean beef and brown rice for the healthiest alternitive. 

 

2. Chicken Stir-Fry

Stir-fry is great because you can switch it up by trying it with different vegetables, or for the nights that you dont have time to chop veggies, just throw in a bag of pre-mixed frozen ones! This one from Hip 2 Save is great over brown rice Tip: When cooking with brown rice, it is usually most effecient to make a big batch of it and save what you don’t use. That way you can always have some on hand when you need it! 

 

3. Quinoa Crusted Tofu Nuggets

This recipe might sound a little “out there” but I promise you don’t have to be a full-fledged vegan to eat tofu. It is actually a cheaper protein alternative to buying meat! This three-ingredient recipe from The Cookie Writer is waiting for you to give it a try…
