Food Blog: Roasted Sweet Potato Fries

This article is written by a student writer from the Her Campus at UIC chapter.

Thanksgiving is coming up and this recipe is perfect for a side dish! I love potato dishes, especially these crispy sweet potato fries. With the holiday coming up, you can make a big batch of this and everyone will be so impressed. This recipe is great because there are very few ingredients and it is very affordable.

*Serves 1-2

Ingredients:

Salt & Pepper

Rosemary

2 cloves of garlic

1 Sweet Potato

Olive oil

1)   First, peel the potatoes and soak them in cold water. This will help remove all the starch for a crispy potato.

2)   After 10 minutes dry the potatoes very well with paper towels.

3)   Pre-heat the oven to 375 degrees.

4)   After drying the potatoes very well, cut the potatoes into wedges, and place them into a big mixing bowl.

5)   Add rosemary, 2 tbsp of olive oil, and salt and pepper to taste.

6)   Place the potatoes in the oven for 30-40 minutes or until golden and crispy.

7)   While the potatoes cook, mince two garlic cloves and set aside.

8)   When the potatoes are ready, toss the garlic along with the hot potato fries and mix well.

Enjoy!
