Why skip breakfast if it can be the most delicious meal of the day? If you ever wonder whether it is a good idea to wake up half an hour earlier to whip up an easy meal before your 8 a.m. class, then consider trying out this easy, healthy meal called “Christine’s Classic Breakfast” (even though it makes a great lunch or dinner). Not only is it quick to make, but also worth waking up earlier in the morning.

First, you need to pick up five ingredients: eggs, whole grain bread, avocados, olive oil, and kale. These ingredients are excellent sources for your essential daily vitamins, carbohydrates, and protein. They are also easily accessible in many grocery stores and markets for a budget ranging from $9-$10, which will make around 12 meals.

Start off by heating up your cooking pot on medium. Add a teaspoon of olive oil and let it warm up for a minute. Add in a handful of chopped kale and cook it for 3-4 minutes. Transfer it to a plate and crack an egg into the pot. Get creative! Sunny-side up or scrambled, cook your egg however you want. While your egg is cooking, toast a slice of whole grain bread. When it pops up from the toaster, spread a layer of mashed avocados (usually a quarter of a medium avocado will do the trick), and lay your cooked egg on top.

Voila! Your meal is complete and it is simple, healthy, and delicious!
