Have you ever found yourself digging through your food pantry on a weeknight, only to find either A.) instant mac n’cheese B.) ramen noodles or C.) that lonely jar of peanut butter? Eating out at Mooyah’s every night isn’t the best option for your health or your bank account either. At the same time, if you go grocery shopping, steer clear of mindless sales that might seem like a good idea. Last year I bought ten cans of soup for ten dollars because there was a sale at Price Chopper…I have still yet to eat a single can. Here are 5 recipes that use the same key ingredients that give you healthy, budget friendly and diverse ideas for dinner.

1.  Laura Vitale’s Tomato and Avocado Salad

I tried this recipe during the dog days of the summer and this is the perfect salad to help you cool off. In addition to the tomatoes and avocados, it also goes perfectly with some grilled chicken breast, whole wheat pasta or even some corn kernels!

2.  Brown Rice and Broccoli Quesadilla

This is a super easy recipe that really only takes 15 minutes. Add some grilled chicken breast, black beans or any vegetable of your choice for extra protein.

3.  Cajun Chicken Pasta

This is a savory pasta that not only brings different flavor but also hits the spot when you’ve had a long day. It’s filled with flavor but still under 400 calories.

4.  Spring Stir Fried Chicken with Sugar Snap Peas and Carrots

Chang’s Garden racks up not only calories, but also MSG and sodium. With this recipe, you can modify the ingredients to your liking. This is takeout, but the healthy version. The great thing about stir fry is that you’re able to add your favorite vegetables. This goes great with brown rice, as well.

5.  Chicken Sweet Potato and Kale Soup

For the colder days, we all just want to eat something warm and soothing. This soup is perfect for those rainy, cold days where all you want to do is “Netflix and Chill.”
