5 Easy Avocado Recipes!

Avocadoes have taken the culinary world by storm recently, quickly becoming everyone’s favorite superfood (including my own)! If you’re just as obsessed with this fruit as I am, here are 5 quick, easy, and declious recipes that you need to try the next time you pick up avocadoes at the market. 

1. Avocado and Shrimp Tacos

This yummy recipe is super quick and customizable! Just cook some shrimp and heat up a tortilla as if you’re making a simple shrimp taco. Then, just add in some small slices of avocado and you’re done! I love adding in some more varieties of food into these small tacos, including lettuce, feta cheese, and a spritz of lime. 

2. Avocado Toast

This is another really simple, yet delicious option. Avocado toast is great to eat for breakfast or lunch, and it’s super filling so it won’t leave you hungry in between meals. I like sprinkling some red pepper flakes on top of the toast to add some flavor. 

3. Egg-cado

This is probably one of the most unique options on this list, but don’t let that stop you from trying this out! Just scoop out the pit of an avocado, crack an egg into the newly created hole, and place it in the over for 425 degrees until the egg is fully cooked. Top this meal with red pepper flakes, chives, salt, and pepper to taste.  

4. Kiwi Avocado Smoothie

This is a delicious and sweet drink that is perfect for the summertime. It will require half an avocago, 2 sliced and peeled kiwis, 1/8 cup of lime juice, 1/8 cup of fruit juice of your choice or milk, honey to taste, and 2 or 3 cubes of ice. Blend all of this in a blender until it’s creamy and smooth, pour it in a glass, and enjoy!

5. The BEST guacamole

We couldn’t reasonably publish this list without some type of a guac recipe, so here’s one I found online a while ago that I swear by: In a large bowl, place the a scooped avocado and lime juice, tossing to coat the fruit with the juice. Then, drain the avocado and reserve the lime juice after 3 avocados have been coated. Use a potato masher to add salt, pepper, cumin, and cayenne, and then mash this into the avocado. Then, beginning adding in onions, jalepeno, tomatoes, cilantro, and garlic. Once you’re finished adding your choice of other guac ingredients, add 1 tablespoon of the reserved lime juice (from the first step). Then, let the guac sit at room temperature for one hour until it’s ready to be served!
