Five Tasty Dorm Room Recipes

It’s already the middle of the second semester, and I know we are all getting tired of the BLUU food again after eating it for eight weeks… but, you don’t have to be at home to have a home(dorm)-cooked meal! Here’s a few easy, low-ingredient recipes that are no-bake or require only a microwave to cook to help spark your appetite this spring! Bon appétit!

 

1. Skinny Peanut Butter Dip

Ingredients:

  • 1 cup plain nonfat Greek yogurt
  • 3 tablespoons creamy peanut butter
  • 1-2 tablespoons maple syrup or honey, to taste
  • Dippers, for eating (apples, celery, crackers, etc.)

Directions:

  • Stir yogurt, peanut butter, and maple syrup or honey until no lumps remain. Serve and enjoy!
  • Store in an airtight container in refrigerator for up to 1 week.

2. Avocado and Provolone Turkey Wraps

Ingredients:

  • Tortillas
  • Garlic and herb Laughing Cow cheese
  • Spinach
  • Turkey
  • 2 slices of provolone cheese
  • ¼ sliced avocado
  • 4 strips of red bell pepper (optional)

Directions:

  • Layer ingredients together on tortilla.
  • Roll up, cut, and enjoy!
  • Keep refrigerated.

3. Microwave Banana Bread English Muffin

Ingredients:

  • 1 small banana, mashed
  • 2 tablespoons coconut flour
  • ¼ teaspoon baking powder
  • 1 large egg
  • Dairy-free milk of choice
  • 1-2 teaspoons granulated sweetener of choice (optional)

Directions:

  • In a bowl, combine all dry ingredients and mix well.
  • Add the mashed banana and egg and mix well. Using a tablespoon at a time, add dairy-free milk until a thick batter is formed.
  • Spray a microwave-safe bowl with cooking spray and pour batter into it. Microwave 3 minutes or until you can stick a knife into the center and it comes out clean.
  • Remove and let stand 1 minute before serving.

4. Instant Cauli Mac-n-Cheese

Ingredients:

  • ¾ cup frozen (or fresh with a bit of water) cauliflower florets
  • 1 oz. cheddar cheese, shredded
  • 1 tablespoon heavy cream

Directions:

  • In a small microwaveable dish with lid, microwave cauliflower covered for about a minute.
  • Remove from microwave and chop cauliflower into small pieces.
  • Microwave for another 50 seconds, then add shredded cheese.
  • Microwave for another 15 seconds.
  • Stir melted cheese in, then stir in heavy creams until sauce forms.

5. Three Ingredient Chocolate Cake

Ingredients:

  • 1 ripe banana
  • 1 egg
  • 1 tablespoon cacao powder

Directions:

  • Peel, cut and put 1 ripe banana into medium bowl.
  • Crack one egg into bowl.
  • Put 1 tablespoon of cacao powder into mixture.
  • Beat very well until smooth.
  • Pour mixture into mug.
  • Microwave for 1 minute or until you can stick a knife into the center and it comes out clean.
