3 Quick Recipes You’ll Go Bananas For

This article is written by a student writer from the Her Campus at SDSU chapter.

For those of you who may not know me, I am a banana enthusiast. On average, I have at least one a day and never get tired of the taste. Bananas are great for your digestive system, are rich in potassium and are overall delicious! Another one of my favorite go-tos is peanut butter. Peanut butter and other related nut butters are healthy fats that are rich in protein. With that being said, I’d like to share some of my favorite PB and banana combos that are quick and easy to make.

Overnight Oats

First up are Overnight Oats. Like most college students, I personally don’t always have time to make a large breakfast and usually end up grabbing what’s readily available in my kitchen. However, I discovered that making overnight oats was a great way to prepare ahead of time and have a fulfilling breakfast for the day.

Ingredients:

-Oats

-Peanut Butter

-1 Banana

-Almond Milk (or any milk of your choice will do)

-Chia Seeds

All you need to do are fill some small containers or mason jars with these ingredients and voilà, they are ready to be placed in the fridge for the night. For a fresher taste, I like to prepare one serving the night before for the following day. However, overnight oats can last for several days in the fridge.

Peanut Butter Banana Toast

Next is one of my personal favorites; banana toast. My roommate introduced it to me earlier this year and I cannot get over how simple it is to make.

All you need is:

-1 Banana

-Peanut Butter

-Two Slices of Bread of Choice

The only steps required to create this yummy snack are warm your bread slices in the toaster and cut up your banana into fine slices to lay over the peanut butter. Yes, that’s it!

Banana Smoothie

Last but not least is the perfect post workout or summer day snack, whenever you are in need of something refreshing.

To make this smoothie you will need:

-Half or whole banana

-Peanut Butter

-Almond Milk (or milk of your choice)

-Fresh or Frozen Fruit of Choice

*Optional*

-Chia Seeds

-Spinach

-Ice (If fruit is not cold enough)

Costco sells frozen, pre-made smoothie packs that are great for this smoothie. The packs come with berries and spinach. You can also find frozen berry packs at our local Trader Joes. As you can see, there are various ingredients so you do not need a full banana, unless you prefer the banana over berry taste.

All of these snacks are super affordable, easy to make and can totally be tailored to your preferences. Not to mention, most of them require many similar ingredients allowing you to mix and match around. If you try any of these tasty treats, be sure to take a picture and tag us in your photo.
