I hope that some of you are as avid bakers as I find myself. If so, then I have the perfect cookie recipe for you! These apple cookies with cinnamon cream cheese frosting will soon become a staple in your lives. They are perfect for a lazy fall day when all you want to do is cuddle up on the couch, throw on your favorite blanket, and perhaps turn on the classic Gilmore Girls.

This recipe was taken from Two Sisters Crafting. I will provide the link here just in case you all want to check out some of their other delicious recipes.

Ingredients for the cookies:

1 cup salted butter (softened)

1 cup granulated sugar

1/2 cup brown sugar (packed)

2 Large eggs

1 teaspoon vanilla extract

3 1/2 cups all-purpose flour

2 1/4 teaspoons cinnamon

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup finely diced and peeled apple

Instructions for the cookies:

Peel and dice 1 cup of tart apples.

In a large bowl, cream butter and sugars until light and fluffy.

Beat in eggs and vanilla.

Mix in cinnamon, baking powder, baking soda, and salt and mix well.

Add 1 3/4 cups of flour and mix until combined.

Add in 1 cup of apples and mix with a spoon.

Add the remaining 1 3/4 cups of flour and combine until the flour is completely incorporated into the cookie dough.

Bake the cookies in a 350-degree oven for 13-15 minutes or until golden brown around the edges.

Allow cookies to cool.

Frost the cookies with a cream cheese frosting

Sprinkle with a dash of cinnamon (optional)
