Now that November is here, the only thing I can think about is Thanksgiving! It is by far my favorite holiday. I love spending time with my family, and then ending the night with a Black Friday shopping spree with my friends. But there is one obvious factor which we can’t ignore… the food!

Since we host Thanksgiving at my house, I witness a lot of cooking chaos the day of. But there is nothing my mom makes for Thanksgiving that I won’t eat. Cooking the turkey and the casseroles can get a little hectic, so I thought that I would share one of the easier recipes that we make on this day.

If you are looking for an easy appetizer to hold everyone over before dinner, or a little addition to the dessert table, corn fritters are super easy and delicious to make, here’s how:

The Batter:

· 2 large ears sweet corn, or 1 packed cup frozen corn, thawed and drained

· 2 large eggs · 1/4 cup whole milk (Can use substitute if necessary)

· 1/4 cup all-purpose flour

· 3 tablespoons yellow cornmeal

· 1 1/2 teaspoons sugar

· 1/2 teaspoon salt

· 2 1/2 teaspoons baking powder

· 1 tablespoon canola or peanut oil to fry

· Powdered sugar for finishing

Steps to Make:

1. Using a knife, shave the corn kernels off the cob into a bowl (if you’re using frozen corn kernels, dump into bowl after thawing)

2. Add eggs and milk into bowl, whisk until combined with corn

3. In a separate bowl, combine flour, sugar, salt, baking powder, and cornmeal

4. Add bowls together, stir with spatula until batter thickens

5. In a pot or skillet, add oil so that it is roughly 3-4 inches deep. Heat to medium-high heat until it is about 370 degrees F

6. Once the oil is hot, drop round tablespoons of the batter into the oil. Only drop a few at a time, the fritters should not be crowded or touching one another

7. Cook fritters for about 2-3 minutes on each side (until they are golden brown)

Once cooked, place fritters on a pan or wired rack to cool. Dust with powdered sugar and then serve!
