One of my favorite holiday traditions is to make pumpkin bread with my mom. It is something that we have done ever since I can remember, and it will always be one of my favorite treats. One year for my birthday, I even asked my mom to bake pumpkin bread for me instead of a cake! I’ll leave the recipe down below, and I hope you all try it out and love it as much as I do!

Ingredients:

  • 1 cup margarine (You can also use butter, but we’ve tried that before and it doesn’t taste as good!)

  • 2 3/4 cups sugar

  • 3 eggs

  • 1/2 tsp of baking powder

  • 3 cups sifted all-purpose flour

  • 1 tsp nutmeg (This part is the best in my opinion!)

  • 1 tsp baking soda

  • 1/8 salt (You can chose to leave this out, and it still tastes great!)

  • 1 tsp allspice

  • 1 tsp cinnamon

  • 2 cups pumpkin

  • 1 tsp vanilla

Directions:

  1. Preheat oven to 350 degrees, and soften the margarine at room temperature.

  2. Cream margarine, and gradually add sugar and eggs. Mix until well blended.

  3. Sift together the flour, baking powder, nutmeg, baking soda, salt, allspice, and cinnamon. Add to the creamed mixture.

  4. Add pumpkin and vanilla. Mix until well blended.

  5. Grease two 8 1/2 X 4 1/2 X 2 1/2 loaf pans. You can also use 4 small foil pans.

  6. Pour mixture into pans, and bake in the oven for 1 hour, if you are using the bigger pans. If you are using the small foil pans, bake for 40 minutes. Your oven might need to bake the bread for a little longer than I’ve listed, so be sure to check your’s after the 40 minutes or the hour.
