Recipe of the Week: Healthy Pancake Perfection

Are you bored of your microwaved porridge each morning? Are you dreaming of something fluffy, warm, and delicious? Then, this recipe is for you! These 3-ingredient pancakes are quick, easy, and healthy. Talk about packing a punch!

 

Whip up this delicious breakfast or brunch (or dinner!) within minutes – they are sure to impress your housemates and family. Just don’t leave your stack unattended, or you might find an empty plate… We warned you!

Ingredients:

1 ripe banana (spotty)

¾ (180ml) cup milk

1 cup (125g) flour (wholemeal or buckwheat for extra health benefits!)

½ tsp. cinnamon (optional)

Directions

  1. Heat a pan on medium-heat.
  2. Mash the banana in a bowl with a fork.
  3. Add the cinnamon and milk to the banana. Mix well.
  4. Slowly stir in the flour until fully incorporated. Add more milk if necessary.
  5. Pour approx. 3 tbsp. of the mixture in the pan. Flip when bubbles appear on the surface.
  6. Serve with honey, fresh fruit, or yoghurt. Or all three!
