In honor of St. Patty’s Day approaching, I plan to make Key Lime cupcakes over Spring Break! They are delicious, and they are very, very green. Here’s the recipe:
Cupcakes
Ingredients:
1 ¾ cup all purpose flour
1/2 cup unsalted butter, room temperature
1 1/4 cup sugar
2 large eggs
2 1/2 tablespoons fresh lime juice
1 tablespoon grated lime peel
1/4 teaspoon green food coloring
3/4 cup buttermilk
Preheat your oven to 350°F, and line your cupcake pan with paper liners. You can probably find some St. Patrick’s Day themed liners at the supermarket! Put butter in a large mixing bowl and beat until smooth. Add sugar and blend. Beat in your eggs one at a time, and then add the lime juice, lime peel, and food dye. Add the flour and buttermilk, and mix well. Pour the batter into the cupcake pan and bake for 20-25 minutes.
Frosting
Ingredients:
1 8-ounce package cream cheese, room temperature
3 cups powdered sugar
1 stick unsalted butter, room temperature
1 tablespoon grated lime peel
1/2 teaspoon vanilla extract
Green food dye
Beat cream cheese and butter until they are mixed together well. Add the powdered sugar, lime peel, and vanilla, and blend. Add green food dye until the frosting is your desired shade of green. Spread frosting on cupcakes and enjoy! Happy (almost) St. Patty’s Day!
