Getting bored ordering the same PSL over and over again? If you’re like me, fall means indulging in pumpkin everything. In order to spice it up, try these delicious and healthy pumpkin recipes to satisfy your seasonal cravings without the guilt.

Morning

Pumpkin Pie Overnight Oats with Chia

Start your morning off right with this 5 minute easy recipe! Top it off with nuts, cranberries, and coconut flakes for extra crunch. 

You’ll need:

  •  1/8 tsp Ginger, ground
  • 1/4 cup Pumpkin puree
  •  1/2 cup Vanilla almond milk, unsweetened
  • 1 tbsp pure Maple syrup
  • 1/2 cup Old-fashioned oats
  • 1/4 tsp Cinnamon
  • 1/8 tsp Nutmeg
  • 1/2 tsp Vanilla
  • 2 tsp Chia seeds
  • 1/4 cup Greek yogurt, plain nonfat

In a medium bowl, mix together greek yogurt, almond milk, pumpkin puree, vanilla and maple syrup until well combined. Stir in oats, chia seeds and spices. Pour into a glass jar or container and place in fridge for 4 hours or overnight. Makes 1 serving of pumpkin overnight oats.

Pumpkin Pie Protein Smoothie

This yummy smoothie is packed with protein and flavor. Whip it up if you’re craving a PSL without the coffee. 

You’ll need:

  • 1/2 cup 100% pure pumpkin puree, pure
  • 1/2 Banana, frozen
  • 1/2 cup Vanilla almond milk, unsweetened
  • 1 scoop Vanilla bean protein powder
  • 1/2 tbsp Honey, organic
  • 1/2 tsp Pumpkin pie spice
  • 1/2 tsp Vanilla
  • 1 Pecan pieces

Blend all ingredients and enjoy!

Dinner

Easy Pumpkin Soup

Embrace October with this warm and tasty soup. This simple recipe is perfect for busy nights when a craving hits.

You’ll need:

  • 1 tbsp Oil of choice (olive, avocado, or coconut)
  • 1 can Pumpkin puree
  • 1/2 Onion, sliced
  • 2 cups chicken stock
  • 2 cloves Garlic, minced
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1 tbsp Maple syrup
  • Optional: 1/4 tsp Cayenne

Heat oil and sauté garlic and onion for 5 minutes. Add pumpkin puree, chicken stock, spices and maple syrup. Bring to a boil and then reduce heat and let simmer, covered, for 7-10 minutes. Transfer to a blender and blend until smooth. Let cook for 5 minutes, stirring often. Enjoy!
