It’s finally fall! As the leaves on the trees around Augie start to change, so do all of our taste buds! Pumpkin spice everything is on the menu during fall, and it’s time to take full advantage of all the muffins, donuts, pies, lattes, and anything else you can think of with pumpkin spice flavor. If you’re a pumpkin lover like me, you MUST try the pumpkin pie shake at Whitey’s, a pumpkin spice chai tea latte from Starbucks, pumpkin donuts from Dunkin, and then try baking these healthy and yummy pumpkin protein bars yourself! Super easy, super quick, and super tasty! This recipe uses a lot of ingredients you probably already have at home, and takes very little time to prepare. Enjoy pumpkin lovers!!!
RECIPE:
Dry Ingredients:
1 cup of your choice of oats
1 teaspoon baking powder
1 teaspoon baking soda
½ tablespoon salt
1 tablespoon pumpkin pie spice
1 cup your choice flavor of protein powder (if you choose!)
½ cup chocolate chips
Wet Ingredients:
1 cup canned pumpkin
¼ cup maple syrup or sweetener of your choice
½ cup milk, or non-dairy beverage of your choice
WHAT TO DO:

Preheat oven to 350 degrees. Line a pan with parchment paper, or nonstick spray for easy removal.

Mix dry ingredients in a bowl.

Mix wet ingredients in a separate bowl.

Combine wet and dry ingredients and mix thoroughly.

Pour batter into pan and spread evenly.

Bake for about 20 minutes, but make sure to check on bars with a toothpick or fork. Stick the toothpick into the pan until it comes out clean.
