I like to cook, and I like to bake. I’ve tried a lot of recipes, and these are some of my tried and tested favourites.

 

Chokladbollar (Swedish Chocolate balls)

These are a Swedish favourite. You can find hundreds of different recipes for them, and you can find a lot of variations for them, but this is a classic recipe. They can be rolled in coconut, sprinkles or pearl sugar.

Recipe

150g Butter

1 ½ dl Sugar

A dash of vanilla essence

3 tbsp cocoa

2 tbsp of cold coffee or water (or liquor if you like)

4 dl of rolled oats

Mix ingredients together. It’s easier if the butter is soft and you start to mix it with the sugar and then add the rest. Finish by rolling balls out of the mixture and coat then them in your choice of sprinkles, coconut or pearl sugar.

 

Mediterranean Bowl with Hummus

I found this recipe just a couple of months ago, and I absolutely love it. It’s super easy to make and you can either make the quick recipe for hummus or buy it premade.
