My favorite part of the day is when it is time to cook dinner. It is the first time during the day that my roommates and I are all in the apartment at once. Dinner is when we come together to cook a tasty, homey and comforting meal that unites us at the kitchen counter. Some of my favorite memories have been made while cooking with my roommates and friends.

Here are four of my favorite recipes that are in the weekly rotation more often than not. Definitely give them a try – they are crowd pleasers.

1. Cashew Chicken Lettuce Wraps

In twenty minutes, you can make this satisfying dish that doesn’t weigh too heavy in your stomach post-dinner. My roommate who doesn’t eat chicken substitutes the chicken for tofu and she loves it just as much as the rest of us! It is equally as easy to make as it is yummy!

2. The BEST salmon tacos

The rub you make for the salmon that goes into this recipe is to die for. I can handle this one by myself to make for my roommates and it pleases every single time. I have never made the other portion of this recipe, only the salmon to serve in some soft taco shells. If you attempt the avocado crema or pickled red onions, please let me know. This recipe is a staple in the winter, spring, summer or fall and I urge you to try it out.

3. Creamy Tortellini Soup

If you are in need of a comfort food that makes you feel like you are at home, this creamy tortellini soup is perfect for you. It feels like a warm hug on a cold day. This meal has my roommates and I talking about it at least once a week. I haven’t met a person who doesn’t obsess over it.

4. Eggplant Pizza

There isn’t a Sunday grocery shop where we haven’t purchased an eggplant or two to make this meal. Pair it with some pasta and roasted broccoli and it is so yummy. Eggplant is such a great vegetable and seriously tastes insane in the form of pizza. They are just as good (if not better) the next day cold as a quick snack. You can also swap eggplant out for zucchini.
