Four Easy Breakfast Recipes to Help You Power Through Exams

Breakfast is a necessary start to the day, yet it can be so hard to find time for. The first meal of the day is essential for concentration and success in school, especially with finals fast approaching. These quick and easy recipes are some of my personal favourites, perfect for when you’re in a time crunch. 

1. Omelette

You will need:

  1. 2 eggs
  2. 1 Tbsp water
  3. Your favourite toppings- I personally like cheese, bacon, spinach and bell peppers, but the possibilities are endless!

How to make it:

  1. Spray a frying pan and place it on the stove on low-medium heat
  2. Crack your eggs into a small bowl and add the water
  3. Pour the egg mixture into the pan and cover
  4. When the eggs appear to be just about ready, add your toppings, fold the omelette and keep on the heat just until the cheese melts
  5. Remove pan from the heat, place omelette on a plate, and enjoy!

Optional: 

  1. Sautee vegetables before adding to the omelette
  2. Serve omelette with a slice of whole grain toast

2. Simple Breakfast Wrap

You will need:

  1. 2 eggs
  2. 2 Tbsp milk
  3. 1 tortilla (I like whole grain or spinach tortillas)
  4. Your favourite cheese, shredded

How to make it:

  1. Spray a frying pan and place it on the stove on low-medium heat
  2. Crack your eggs into a small bowl and add the milk
  3. Whisk the eggs and the milk until combined
  4. Pour the egg mixture into the pan and begin “scrambling” the eggs (warning, the eggs will cook FAST!)
  5. Continue scrambling until all of the liquid is absorbed and the eggs are golden, remove the pan from the heat, and add the eggs to the tortilla
  6. Add the cheese, fold the tortilla, and enjoy!

Optional: 

  1. Add your favourite veggies and/or breakfast meats to the wrap

3. Basic Breakfast Smoothie

I’ve never been a huge breakfast person, especially early in the morning, so smoothies are my go to! I was given a single serving blender for my birthday that makes my smoothie in a travel cup, perfect for a quick breakfast on the go! These can be found at almost any grocery store, as well as Canadian Tire.

You will need:

  1. Your favourite fruits, frozen (my personal favourites are strawberries, peaches and blueberries!)
  2. 1 banana
  3. Approximately 1 cup of low-fat milk or your favourite juice (milk will give the smoothie a creamier texture, and juice will bring out the fruity flavours of the smoothie)
  4. 1 individual serving yogurt cup

How to make it:

  1. Add all ingredients to a blender
  2. Note: The 1 cup of liquid is an approximate estimate, you may need more or less depending on the desired texture of your smoothie, feel free to eyeball!
  3. Blend until the desired texture is achieved, pour into a glass, and enjoy! 

4. Easy Iced Coffee… because we all know that caffeine is a NECESSITY during finals!

You will need:

  1. 1 cup of coffee, refrigerated (leftovers from yesterday’s pot works perfectly!)
  2. Cream, milk or sugar, as desired
  3. Ice cubes

How to make it:

  1. Place the ice cubs in a mug and pour the coffee over them
  2. Add the cream, milk and sugar as you please, and enjoy!
