How to Make Breakfast AND Lunch in 15 Minutes!

With the tremendous amount of work that we have to manage – classes, internships and part-time jobs, to mention a few – Waseda collegiettes often find it difficult to have quick, healthy meals that do not involve purchasing ready-made food from the conbini. In the first article of our Wasejyo Cookbook series, we are going to introduce you to methods to make breakfast AND lunch within 15 minutes. Nutritious, yummy, easy and quick! All you have to do is to wake up slightly earlier, and you can have a healthier diet — even with your tight schedule. Scroll down for our recipes for French toast and toast roll!
 
Ingredients (Serves two)
 
 
 
Steps
 
1. Pick a bowl that is shallow yet wide enough to dip bread in.
 
2. Crack three eggs into the bowl and stir them evenly with a chopstick or fork.
 
3. Keep stirring, and add milk and a pinch of salt to taste.
 
 
4. Next, from the four slices of bread, pick two and slice them into halves, forming four even triangles. 
 
For the remaining two pieces of bread, remove the crusts with a knife or simply by tearing them off with your hand. 
 
5. Dip the bread into the eggs mixture one at a time, making sure that the entire surface is evenly covered. Put aside. 
 
 
6. Heat the lightly oiled pan with medium high heat. Once the oil starts to heat up, place the soaked bread in the pan and cook them one by one until they turn golden brown. It takes only 90 seconds for each side. 
 
Make sure to keep a close eye on the bread to ensure that it doesn’t get burnt!
 
 
7. While waiting for the toast to be done, cut the strawberries into thinner slices. At the same time, shred the cucumber. 
 
Tip: Use a fruit peeler for the latter to save more time!
 
 
8. Sprinkle the sliced strawberries and some blueberries onto the pieces of triangular French toast and serve warm. Drizzle some maple syrup and dust some icing sugar on top to make it look even more appetizing!
 
 
Breakfast done, now on to lunch: the French toast roll!
 
1. Use the last two slices of French toast (the ones without the bread crusts) to make French toast roll. 
 
2. Prepare a piece of aluminum foil that is approximately twice the size of the toast itself.
 
3. Lay a slice of toast on the foil and scatter shredded cucumber on it. Layer ham on top of the cucumber. 
 
Tip: You can also use smoked salmon, avocado or fresh onions for an even more wholesome toast roll!
 
 
4. Roll up the French toast from one end to the other and wrap it with the aluminum foil as illustrated below. Repeat with the other toast. 
 
 
5. Next, cut the rolls into halves, and they are ready to be put into your bento for school!
