With autumn in full swing, it’s finally time for us to enjoy the best comfort foods. Whether it’s a bowl full of chicken and dumplings, butternut squash soup, or a bite full of gooey goodness with a chocolate chip cookie. At the first hint of cold weather when I was a kid, I begged my family to take me to the store so we could get a box of Pillsbury sugar cookies. They always had the cutest designs and I think that made them taste better. I could eat a whole pan in one sitting if no one was watching me.
I was in the grocery store the other day and I came across a box of these sugar cookies, and I thought to myself, “How can I take these cookies and elevate them?” I wanted to incorporate this nostalgic feeling with an all-time favorite: chocolate chip cookies. I thought of the signature peanut butter cookies with a Hershey’s kiss in the center that my grandmother makes every Christmas and decided that I would do a similar cookie except it would be a chocolate chip cookie with the sugar cookie in the center.
And what is the result? A delicious chocolate chip cookie with a surprise inside. A cookie that is both gooey and decorative. A cookie that is so easy to make, anyone can do it, even me as a baking novice myself. I wanted to share this recipe so that you can try them yourselves because these cookies have quickly become my favorite fall treat!
What are you going to need?
Ingredients:
- 1 cup of butter
- 1 cup of white sugar
- 1 cup of brown sugar
- 2 eggs
- 2 1/4 tsp vanilla extract (imitation works too)
- 2 1/2 cups of flour
- 1/2 tsp salt
- 1 1/2 cups of chocolate chips (I use semi-sweet)
- 1 1/2 cups of chocolate chunks (Tony’s is my favorite)
- 1 box of Pillsbury Halloween Sugar cookies

Time to get started…
Steps:
- Melt butter in a pan until brown
- Transfer butter to a medium-sized bowl
- Mix together eggs and vanilla, then pour into a butter bowl
- Fold in dry ingredients starting with the sugars (flour, sugar, salt)
- Chop up the chocolate chunks
- Fold in both the chocolate chips and chunks
- Once everything is mixed in, allow cookie dough to chill in the fridge for ~30 minutes
- After the cookie dough chills, grease a baking pan
- Pre-heat oven to 350
- Roll cookie dough into medium size balls and place on the pan
- Flatten cookie dough balls and place one sugar cookie in the middle of each
- Bake cookies for 12-15 minutes (or until golden brown)
- Enjoy your delicious spooky chocolate chip cookies
