Pinterest Recipe of the Week

Three ingredient no bake cookies. What could be easier? The sweet tooth was calling, which lead me to search for easy cookies I could make with my limited pantry, and with my limited time. Pinterest, of course, was my saving grace. I stumbled upon this lovely cookie recipe I tried because it reminded me of the delicious cookies my Nana taught me to make when I was young. While not quite as delicious (or filled with love) as a grandmother’s homemade cookies, these cookies are a simple way to satisfy your sweet tooth.

Ingredients:

(makes 12 cookies)

½ cup peanut butter

½ cup honey

1 ½ cups oats (old fashioned or instant oats)

Combine peanut butter and honey in a microwavable safe bowl.  Mix together and heat in microwave for 30 seconds. Stir, and heat again for 30 seconds. The mixture should be slightly melted and easily spreadable.  

Pour oats into the peanut butter and honey mixture. Stir until all the oats are coated in peanut butter and honey. Scoop approximately tablespoon sized cookies onto a plate. Place the plate of cookies in the fridge for 3 – 4 hours until cooled and hardened. Eat and enjoy!!
