3 Tasty Recipes for the Quarantined College Student

This article is written by a student writer from the Her Campus at UPR chapter.

Tired of ordering UberEats or going on those drives to Denny’s? Are you so fed up by the monotonous day to day that you literally can’t have another Lean Cuisine? Well, I got you covered. Here are three delicious recipes you can make at home! They’re borderline healthy, absolutely tasty, and the kind of “you-won’t-burn-water” easy.

Ramen

Yes, you read that right. The fuel of the sleep-deprived, the broke college students, and the lazy: good ol’ regular ramen. This is ramen with an easy twist! If you’re tired of the regular cup noodle dish, take the Studio Ghibli approach. Ponyo will lead the way.

Ingredients:

– 1 Ramen packet

– 1 tbsp of soy sauce

– 1 piece of ham

– 1 boiled egg

– ¼ of a spring onion

Instructions:

Start boiling your water. While the water is heating up, sautée your ham in a pan. Once the water is boiling, add the noodles and the soy sauce. Lower the heat, and keep the noodles cooking for three minutes. Then, add the spring onion. Turn the heat off. To serve, grab a bowl, top it with the ham, cut the boiled egg in half, and add it to the ramen! Now you’ll have a ramen just like Ponyo!

Vegetable Marinara Pasta

Drop that Chef Boyardee down and grab an actual box of pasta! After all, it’s a classic and easy meal that anyone can make.

Ingredients:

– 1 serving of dry pasta of your choice

– ½ cup of marinara sauce

– 1 clove of garlic

– ¼ onion

– ¼ tomato

– 1 pinch of hot pepper flakes (optional)

– basil to taste

Instructions:

First, chop up your vegetables and boil your water (make sure to add some salt to it!). Then, once your water is boiled, add your pasta (it should be ready in 8-11 minutes). In a pan, add some olive oil, chopped onion, and the garlic. When the onion softens, add the tomato and sautée it. Then, add the sauce and let it simmer with the vegetables. By then, the pasta should be ready, so add it to the sauce. If it seems that there isn’t enough sauce, add a little bit of pasta water. This way, it’ll mix and there will be more sauce. If you want to, add the hot pepper flakes once everything is mixed. Finally, when it’s time to serve, top it off with basil, and enjoy!

Omurice

Omurice is Japanese for omelette rice. It’s a combination of Western and Japanese cuisine. It takes a bit of skill, but fear not! It’s easy enough to prepare with some leftover rice and chicken!

Ingredients:

– 2 eggs

– 1 cup of cooked rice

– ½ onion

– 2 tbsp of ketchup

– ½ minced chicken breast

– salt and pepper to taste

– 1 tbsp butter

Instructions:

Prep your vegetables and cut your chicken breast into cubes. Set aside your vegetables and chicken. Then, whisk the eggs in a separate bowl. Next, add a drizzle of olive oil in a pan. Add in the onion and cook until soft. Then, once the mix is fully cooked, add the chicken and the rice. Now, add the ketchup until thoroughly mixed! After two minutes, it should be ready, so set it aside. In another pan, add some butter. As soon as it’s all melted, add the eggs. While the egg is cooking, stir it around to create curds and swirl it around until it’s fully cooked. Turn the heat off and top the omelette onto the rice! To finish the dish, grab the ketchup, and make a cute drawing on your omelette!
