Go-To Recipes For The Busy Knight

If there’s anything we know here at UCF, there’s always something to do. But, if you’re like me, you often forget to eat when you go on one of your adventures, be it Universal Studios, Disney,  just to work, or to class, one of these recipes could save your butt in a pinch. 

Mississippi Pot Roast

This recipe is made in the slow cooker with a grand total of five ingredients. It takes ten minutes of prep time, and by “prep,” I mean dump two seasoning packets on some meat, throw the meat in a slow cooker, and put butter and peppers on that meat before putting a lid on it. It cooks for roughly eight hours, so you can set and forget this recipe before work, before class, or before a day at the parks. Then, you can come home to a tender, flavorful roast that goes great with mashed potatoes and steamed veggies.

Spaghetti Sauce

This spaghetti sauce is the bomb. This is another slow cooker recipe, but it requires a few more ingredients. It is, however, highly customizable. I’m not a huge fan of stewed tomatoes, so I sub those out for another can of diced. The seasonings can be varied to taste, and I find I like this recipe best with ground italian sausage as opposed to chunk. Regardless, this is the richest, tastiest spaghetti sauce I’ve ever had, and I didn’t have to go to a restaurant to get it. 

Banana Bread

So my roommate just made this recipe last week, and when I got home the room smelled heavenly. I ate two muffins (we didn’t have a loaf pan) right off the bat and immediately begged her to make more. I don’t even like bananas, but these were so moist and tasty that I honestly considered fighting my other roommate for the last one.

Crepes

I make this recipe when I have literally nothing to make for breakfast. All you need are flour, eggs, and milk, and it takes less than thirty minutes to make a heaping helping of crepes. Smothered in cookie butter, nutella, peanut butter, whatever, these are a great to-go breakfast. Pro-tip, throw all of the ingredients in a blender bottle for quick prep.
