The Easiest Breakfast Ideas For Midterms

This article is written by a student writer from the Her Campus at UC Irvine chapter.

Egg and Sriracha Oatmeal: We’ve all had sweet oatmeal, but how about some savory oatmeal? I love oatmeal because it is so easy to prepare (literally takes 5 mins max), and is easy on my broke college student budget. I like to get my oats on Amazon. I can get five pounds of oats for only $7 with free one day shipping! So, how do I prepare this wonderful dish? First, prepare oats as you normally would. I like to do one part oats, one part water, and one part milk of your choice (I like unsweetened almond). You can either use the microwave or the stove top for cooking the oats. I personally like to use the stove top if I have extra time, but if you are on a time crunch, simply pop a bowl with the water, milk, and oats and microwave for 2-3 minutes. Fry up an egg, and top off your oatmeal with a drizzle (or generous helping) of sriracha. If you are feeling extra fancy, I would highly recommend adding sesame seeds and thinly sliced green onions for a pop of color and to compliment the nutty flavor of the oats. Delish!

Avocado and Egg Open Faced Sandwich: If I am in need of some extra energy, one of my go to breakfasts is the open faced sandwich. All you do is slap some stuff onto some bread and call it a day. My favorite combination is avocado and egg. Since avocado is high in fats, I know that I’ll have plenty of energy throughout the day. I personally love rye bread, but you can use whatever kind of bread you fancy. Lightly toast your bread, and top it off with a generous helping of avocado slices and a fried egg. I like to top mine off with the Everything but the Bagel seasoning from Trader Joes. So good!
