MY GO-TO MEALS WHILE LIVING ON MY OWN

Living on your own for the first time can be very overwhelming, especially when you no longer have a dining hall to rely on for meals. I’ve been living and cooking on my own for three years now, and have learned a few things. These are some of my easy go to meals to help you along your journey of learning to cook for yourself. 

My favorite breakfast to make is super easy, and requires very little cooking. I typically make avocado toast, with just salt and pepper on top. I highly recommend using sourdough bread (from Trader Joe’s is my favorite). All it takes is toasting a piece or two of bread, cutting the avocado, spreading it onto the bread and seasoning it. Super easy! I also like to make a yogurt bowl with vanilla yogurt, cinnamon granola, and strawberries! Both of these make for a super easy and quick breakfast!

For lunch I have a few different things I like to make. My quickest and easiest lunch is a bagel and cream cheese with apples and chips! I typically make this when I’m running late or have little time to actually make something. If you have more time, I like to make either a quesadilla or grilled cheese sandwich. For the quesadilla it’s super simple, you just put butter or oil in the pan and put the tortilla and some cheese and keep flipping till it’s nice and crispy. You can also add chicken into it or even dress it with some sour cream and guacamole. The grilled cheese is very similar to the quesadilla, just with different bread and cheese. 

Lastly, for dinner my most favorite thing to make is pesto pasta. I like to get the spinach tortellini and Genova pesto from Trader Joe’s. First, you boil the noodles, and then second you’ll take half of the sauce from the container and warm it up in a pan with olive oil and parmesan cheese. Once the noodles have cooked you can strain them, and mix them into the sauce. Then you can top it with a sprinkle of parmesan cheese and you’ll have a finished bowl of pesto pasta. My other dinner I like to make is “soft tacos” . They’re really more like burritos. I cook ground turkey on medium heat and using a wood spoon, mash them into pieces, and add some taco seasoning. Then once the meat is done you can dress it with sour cream, cheese, lettuce, salsa, or whatever you like! These are my favorite dinners to make, and I hope they can inspire you to make them too!
