1. On the Go Pancakes

Yup. Exactly what it says. Only two ingredients to make these bad boys. Sarah Marotta, a UMass student and Group Fitness Instructor, posted this on her blog. It’s a simple and healthy way to get the day started.

- (1) banana
- (2) egg whites
Yields: 2 pancakes

Directions:
- Mash bananas
- Mix in egg whites until batter is smooth
- Use of blender for a quick second is recommended
- Cook batter on medium heat
- Top pancakes with syrup, PB, or fresh fruit.

2. Butternut Squash Pancakes

Ok, it gets a little more complicated from here on out. But, stay with me! Elle is an Instagram phenomenon with over 25k followers. She is known for staying extremely fit while maintaining a balanced diet and lifestyle. Her pancake pictures are one of the many reasons I follow her. The following two recipes are some of her favorites.

- 85g cooked butternut squash (roasted gives best flavor)
- (2) Tbsp Oat Flour
- (1) Tbsp Coconut Flour
- 1/2Â scoop Banana Cream Whey (or protein of choice)
- (1)Â tsp pumpkin pie spice
- 1/2Â tsp Cinnamon
- (2)Â tsp Truvia Baking Blend
- 1/3Â cup liquid egg whites
- (2) Tbsp Unsweetened Vanilla Almond Milk (added at the end if consistency is too thick)
- 1/2Â tsp Banana or Butter Extract
- (1)Â tsp baking powder

Perfect for breakfast, lunch, dinner, dessert…whatever your little heart desires. These pancakes take a total of 10 minutes to prep and cook. Definitely worth a try.
