Itching to start that fall baking? Hot chocolate and pumpkin season is upon us, and we’ve got a mom’s homemade cookie recipe that’s quick, easy, and perfect for October especially:

Pumpkin Cookies

Pre-heat oven to 350 degrees F

Ingredients:

1 Cup of Butter

1 Cup of Sugar

1 canned pumpkin

1 Egg

1 teaspoon of vanilla

2 Cups of Flour

1 teaspoon of baking soda

1 teaspoon of baking powder

1 teaspoon of cinnamon

½ teaspoon of salt

Mix all ingredients, scoop out teaspoon-sized dollops onto a cookie sheet.

Frosting

3 tablespoons of butter

4 tablespoons of milk

½ cup of brown sugar

Mix together, warm up in a small pan until spreadable

Once cookies are out of the oven, smooth some of that icing on top and enjoy!
