Strath Bakes: Cookies

Cookies are a go-to snack for the girls at Her Camous Strathclyde, especially during exam season as they are the ideal study snack! With our easy recipe, you’ll have soft and chewy chocolate chip cookies to enjoy in no time at all.

Ingredients:

2 and 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1 cup of unsalted butter, room temperature

1/2 cup granulated sugar

1 cup light-brown sugar

1 teaspoon salt

2 teaspoons pure vanilla extract

2 large eggs

2 cups of milk chocolate chips

 

Method:

Preheat oven to 180 degrees Celsius.

In a small bowl, whisk together the flour and baking soda.

In a separate bowl, combine the butter with both sugars with a whisk, once light and fluffy, add the salt, vanilla, and eggs. Whisk for 1 minute, until well mixed then add the flour, mix until just combined then stir in the chocolate chips.

Use an ice-cream scoop to measure the size of each cookie, placing them roughly 2 inches apart on a baking tray lined with parchment paper.

Bake for 8 to 10 minutes, until cookies are golden around the edges, but still soft in the centre.

Remove from oven, and let cool on baking sheet 1 to 2 minutes.

Transfer to a wire rack, and let cool completely.

 

Optional: Sprinkle some sea salt on top of your cookies for a salty-sweet taste

Tip: The cookies can be stored in an airtight container at room temperature for up to 1 week.
