It’s Christmas, which means increadible food including MINCE PIES!! Yum Yum!

  • 2 satsumas
  • 1 apple
  • 1 zest lemon
  • a little icing sugar
  • 375g plain flour
  • 260g unsalted butter
  • 125g caser sugar
  • 1 egg

Method:

  1. Rub flour and butter together to make a crumb consistency. Add the sugar and the egg and mix. Fold the pastry until it comes together and then wrap it in cling film and *chill* for 10 mins.
  2. Add the satsumas, apple, and zest to mincemeat.
  3. Heat the oven to 220C. Roll out pastry.
  4. Using a cutter, cut out the pastry and put them into muffin trays. Fill with mincemeat, brush the sides with egg, and add a lid. Glaze the top with egg, sprinkle a little sugar, and make a small indent in the top.
  5. Bake for 15-20 mins until golden brown.
  6. Enjoy Christmas deliciousness!
