Begin by preheating the oven to 180C, the beat three eggs and 185g of sugar together until the mixture is thick and creamy.

Then mix 85g of plain flower and 2 tablespoons of cocoa and ½ tablespoon of baking power together and then sift onto the egg mixture. Fold the mixture together and then pour into a baking tin and cook for about ten minutes.

Once cooked, lay the cake onto a piece of baking parchment, then roll the cake from its longest edge with the paper inside. Then leave to cool!

To make the icing, melt 50g of butter and 140g of dark chocolate together in a bowl over a pan of hot water. Then once liquid, stir in 1 tablespoon of golden syrup and 284ml of double cream. Then, beat with 200g of icing sugar until the mixture is smooth. Then unravel the cake and spread the cream over the top and then carefully  roll up the cake into a log shape. 

Then you will have a Christmas Chocolate Log to impress all your friends!
