The Best Molasses Cookies You’ve Ever Had

Fall is finally here! And what better way to celebrate the new season than to make the best molasses cookies you’ve ever had? When I lived at home, my sisters and I would make these to eat during Halloween movie marathons. They’re soft, cinnamon-y, topped with a layer of melty frosting, and, most importantly, they’re easy to make!

 

Ingredients:

 

Cookies:

2 1/4 cups flour

2 teaspoons baking soda

1/2 teaspoon salt

1 3/4 teaspoons cinnamon 

1 teaspoon ground ginger

3/4 teaspoon cloves

1/4 teaspoon allspice

12 tablespoons softened butter

1/2 cup light brown sugar

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla

1/3 cup molasses

 

Frosting

1 1/2 cups powdered sugar

2 1/2 tablespoons milk 

 

Directions:

 

– preheat oven to 375 

  • whisk together flour, baking soda, salt, and spices
  • In a separate bowl: cream butter, brown and granulated sugar
  • Add egg, vanilla, and molasses
  • Slowly add dry ingredients and beat until just mixed
  • Put 1 tablespoon dough balls on a non-greased cookie sheet
  • Bake 9 to 11 minutes (better to under-bake so they’re soft, shoot for closer to nine minutes)
  • Make the glaze
  • Cool cookies for 2-3 minutes before glazing

 

These cookies are best enjoyed warm with a glass of apple cider. Enjoy!
