Everyone who has moved out of their parent’s house within the past few years will be able to relate to the struggle of cooking one’s own meals for the very first time on a consistent basis. Here, I’ve complied a list of my favourite, easiest, tastiest and quickest recipes that literally have helped me survive my first real year of adulthood so far! I’ve given below a meal, side and a dessert!

1. Creamy Mac n’ Cheese

This one’s a tasty classic that will remind you of home!

  • Add 2 cups of macaroni noodle’s to a pot of boiling water over medium heat (with a little bit of salt and oil) and let it sit for 8 minutes or until cooked through. Be sure to stir every once and awhile. Then strain.
  • Melt 3 tablespoons of butter in another pot. Then gradually add ¼ cup flour in little bits while stirring to create a paste. Next, gradually add 2 cups of milk bit by bit to avoid clumps while stirring constantly. Then, continue to stir until the white sauce thickens. (This step is all done over medium heat).
  • Once the white sauce is thick, add 2 ½ cups of shredded cheese and stir until melted. Then add the noodles and stir.
  • Bake in a casserole dish for 20 minutes at 350F

2. Pull Apart Garlic Rolls

So easy to make, and so delicious… Pair with any meal!

  • Slice Pillsbury Country Biscuit’s dough into small bits (cut each biscuit into 3-4 pieces) and put in a mixing bowl
  • Add 3 tbsp of melted butter, ½ tsp garlic power, 1 tbsp parsley and 1 cup shredded mozzarella cheese into the bowl with the dough and toss with your hands
  • Put 3-4 pieces into each cup of a muffin tin and bake at 375F for 12-15 minutes or until golden brown on top!

You can find a more detailed recipe here.

3. Banana Chocolate Chip Muffins

A quick breakfast or afternoon snack! These are to die for! Makes 6-8 muffins

  • Mash 1 banana in a bowl with a fork and set aside. (Over ripe banana’s are best for this)
  • Stir 1 cup flour, 1 tsp baking powder, ¼ tsp salt, ¼ tsp baking soda, 1/3 cup sugar, ¼ tsp nutmeg into a mixing bowl. Then add ½ cup chocolate chips
  • In another mixing bowl, mix 1 egg, ¼ cup oil, ¼ cup milk, ¼ tsp vinegar. Then mix in the mashed banana. Do not mix the ingredients too much!
  • Add the wet ingredients to the dry in two sections and mix. Then add the batter into a greased muffin tin and bake at 375F for 17 minutes.

Bon appetite, collegiates!
