Thanksgiving Meals in College 101

With SCAD changing our school schedule, it is inevitable that many of us will be spending Thanksgiving at SCAD with our friends! Even though I will be missing out on family, there is no way that I am not getting a thanksgiving feast! I’m sure many of you feel the same, so here are some Thanksgiving hacks… college style!

Individual Sweet Potato Casserole

All you have to do is buy the individual, microwaveable sweet potatoes from Kroger. Just throw one in the microwave for about 6 minutes, or until soft, slice it open, add in all of your toppings, and you are good to go! Butter, brown sugar, and lots of mini marshmallows is always so tasty in sweet potatoes. For a new twist, you could use almond butter instead!

Mini Crock Pot Stuffing

Although there are a lot of needed ingredients for this recipe, it is definitely worth it! Stuffing is my personal favorite dish for the holiday! It is an iconic thanksgiving dish, so it is definitely a necessity! I have never tried this recipe, but I definitely will be this year! It is easy to add or subtract ingredients with this recipe to make it the most like your family’s signature recipe! The author of the recipe said she has used gluten free bread with this recipe and it was still a success! So if any of your friends have diet restrictions, this recipe can still work.

Green Beans

These are super easy! Just buy some bagged green beans and make them how you wish! You can do a traditional green bean casserole or make them a bit more Italian style! Completely up to you! Italian style green beans are so easy! Just heat up the beans, and then add parmesan cheese and Italian dressing. Voila! Already done! Green bean casserole is also easy, with very few ingredients. The recipe for that is below.

Potato Casserole Alternative

Who doesn’t love potatoes? This one is definitely a crowd pleaser! You can get individually wrapped microwaveable potatoes at Kroger, just like the sweet potatoes. If you take the potato and put slices almost all the through it (whether you peel it or not is up to you), and then stuff the cracks with cheese, you can wrap it and put it in the microwave for a cheesy delight! Lastly, dip the slices in sour cream and you will be thanking yourself later!

Baked Apples in a Bag

I absolutely love this recipe! It is so creative and has minimal ingredients, which is something I am always looking for in recipes. There is nothing worse than buying ingredients you know you will never use again. Not only is the recipe cost effective, it is also super fast. The apples are only in the microwave for two minutes, and there is not much preparation needed! This is a must have for dessert.

Rotisserie Chicken

The main dish you have all been waiting for! I know chicken is not the same as a nice Thanksgiving Turkey, but rotisserie chicken is the perfect substitute! It is already pre-made and they also sell these at Kroger, which is super convenient for SCAD students. If you have one of your friends do the side dishes at the dorms, and have one person go get the chicken, you’ll have a hot meal done all at once.

Turkey Roll Ups

If you are not willing to compromise your turkey, then here is a different option! I don’t now if you have ever had the Costco turkey roll ups, but if you have not, they are absolutely amazing! The copycat recipe is below, and I highly recommend it! Instead of using their recipe for the cranberry sauce cream cheese, I do strawberry cream cheese instead, and it is so yummy! So there is my word of advice!
