Finals Week AKA the Killer of our Dietary Routines

Quick and Easy Recipes for the Busy College Student

Whether you’re looking for something sweet or something just as salty as you about your current grades, this list will have it all! I have not only personally tested each and everyone of these recipes for authenticity but also for tasty distractions from studying, something we’re all guilty of time to time. But here we go Bee’s let’s dig in!

Southwestern Rice & Beans 

What You’ll Need:

  1. White Rice 
  2. One Avocado 
  3. Black Beans 
  4. Cilantro
  5. Salsa

​What You’ll Need to Do:

  1. Place the rice in a microwave-safe bowl with some olive oil and water for approximately twelve minutes, when the rice looks thoroughly cooked fluff with a fork and mix in the other ingredients!
Pesto Mozzarella Quesadillas

What You’ll Need:

  1. Tortillas 
  2. Baby Spinach 
  3. Tomato Slices 
  4. Pesto Sauce 
  5. Shredded Mozzarella 

What You’ll Need to Do:

  1. Microwave the tortillas for about 30-40 seconds, and then apply a layer of pesto on the tortilla. Apply as many sliced tomatoes, and baby spinach leaves as you like and then top with the shredded mozzarella! 
  2. Microwave for an additional minute with a plate on top to properly flatten the quesadillas!
Oatmeal Bowls

What You’ll Need: 

  1. Quaker Instant Oatmeal Packets
  2. Whatever Fresh Fruit you like
  3. Peanut/Almond Butter

What You’ll Need to Do:

  1. Microwave the oatmeal packet with either water or milk for approximately one- three minutes.
  2. When the Oatmeal is thoroughly cooked add whatever toppings you desire and enjoy!
Mac&Cheese

What You’ll Need:

  1. 1/3 cup dry pasta 
  2. 1/2 cup water
  3. 1/2 cup shredded cheddar cheese 
  4. Splash of whole milk
  5. 1 Tablespoon Butter
  6. 1 Tall Mug

What You’ll Need to Do:

  1. Fill the Mug with water and pasta and heat in the microwave on high for three minutes.
  2. Take it out to stir and then put it back in to cook for another two minutes, then when your pasta is done cooking dump out the remaining water and add in your butter and cheese and stir until melted.
  3. Add in a dash of milk if you like a creamier mac&cheese if not add some salt and pepper to taste maybe even sriracha and it’s done!
Chocolate Cake in a Mug

What You’ll Need:

  1. 3 Tablespoons of flour
  2. 3 Tablespoons of sugar
  3. 2 Tablespoons of cocoa powder 
  4. 1/4 teaspoon baking powder
  5. Pinch of salt (optional)
  6. 3 Tablespoons of vegetable oil
  7. 3 Tablespoons milk
  8. Splash of Vanilla Extract (optional)

What You’ll Need to Do:

  1. Add your dry ingredients into the mug and blend thoroughly, add your milk and vegetable oil and vanilla and blend until smooth.
  2. Microwave on high for ninety seconds, look out so you do not overcook or else your cake will be dry! Allow it to cool for two-three minutes before eating and enjoy!
