Healthy Lunch Ideas You Can Make In Your Dorm Room

This article is written by a student writer from the Her Campus at Purdue chapter.

Do you ever find it hard to make something healthy for lunch? I do, all the time! Especially in college, where most people in dorms only have access to a microwave and a mini fridge. Ditch those Mac. N Cheese microwavable bowls. Here are four tasty and HEALTHY meals you can make in your dorm room.

Veggie Quesadilla:

If you have a microwave, this recipe is super simple. Get a whole-grain tortilla and spread shredded cheese in the middle. Put in the microwave for thirty seconds. Then you can add your favorite veggies and microwave for another 30 seconds. Fold together and let it cool. Top with sour cream or salsa and enjoy!

Lunch Wrap:

Get a spinach or whole-wheat wrap and put your favorite sauces, deli meats, or veggies inside. You can make any combination you want and there super versatile. My favorite is to spread red pepper hummus on the tortilla, put lettuce, grilled chicken, and shredded carrots inside. So yummy!

Rice Bowl:

Get a bowl and fill it with rice or quinoa. Again, you can make any cuisine version you like. To keep it simple, include tomatoes, avocadoes, peppers, and squash and it’s absolutely delicious.

Taco Salad:

This is my favorite meal and it can be super healthy. Ina bowl, combine lettuce, Mexican rice, black beans, shredded cheese, avocadoes, and sour cream to make a delicious salad. To make it slightly less healthy, you can add crushed tortilla chips for a crunch.

I hope you try and enjoy these recipes! You won’t regret it.
