I Tried a Three Ingredient Recipe So Other Broke 20 Somethings Don’t Have To

This article is written by a student writer from the Her Campus at PSU chapter.

I love baking. It’s as simple as that. However, I can never really make anything because of my student budget. Buying Ramen sucks but I love saving the bucks.

I decided to try and make a 3-ingredient dessert to satisfy my cravings without burning a hole in my wallet. Now, I gave some rules for myself. First and foremost, I couldn’t spend more than 20 dollars. Second, I couldn’t shop anywhere besides downtown State College so I wouldn’t spend any gas money.

Admittedly, I was skeptical about this turning out actually good. This was definitely going to go up in flames, literally and figuratively. I especially thought it was a bad omen that I had to do my back up recipe because McLanahan’s Downtown Market brings shame to the name “market.”

I chose to do a Cookie Butter Cake which consists of 1 ½ cups of cookie butter (if you do want drizzle then you need extra), five large eggs and a ½ cup sugar. Do able enough. Here we go.

Before anything, preheat your oven to 350 degrees. I didn’t do this and I’m warning you. This’ll add an extra 20 plus minutes on your baking, especially if your oven is trash like mine.

You preheated your oven right? Good. Alright, now all you do is heat the 1 ½ cups of cookie butter until it’s really warm and pourable. Do this in 20-second intervals.

Next, you need to beat the eggs and mix in the sugar. Now, I’m no Pioneer Woman, so I just threw my ingredients into my smoothie maker. It worked so you can’t judge.

After that, you need to mix the pourable cookie butter with the beaten eggs.

Pop that sucker in the oven for about 20 minutes.

Alright, it’s done. It looks okay but that still leaves two unanswered questions: did it work and is it good?

The Big Reveal and Review

Okay fam, I paired my slice (that I scooped out with a spoon, mind you) with some extra drizzle and vanilla ice cream (because duh). Here are my thoughts:

This actually turned out delicious and all of my doubts have been shattered. I would definitely recommend this to a friend, plus it only cost about 14 dollars to make. The cake itself is pretty moist and has a lot of flavor, mostly gingerbread. So all in all, the 3-ingredient Cookie Butter Cake gets thumbs up from me.

I’ll see you all on the Great British Bake Off.
