Gingerbread Oreo No-Bake Cheesecake

Ingredients: 

  • Powdered sugar
  • Cool Whip
  • Pumpkin Spice
  • Vanilla Extract
  • Gingerbread men
  • Gingerbread oreos
  • Cream Cheese 
  • Gingerbread pudding

I love these cute little cheesecakes because they are perfect for the upcoming holiday season and they are no-bake! 

Salted Caramel & Nutella Stuffed Double Chocolate Chip Cookies

Ingredients:

1/2 cup (110g) butter
  • 1 1/2 cups (350g) light brown sugar
  • 1/2 cup (55g) cocoa powder
  • 2 eggs
  • 1/4 tsp salt
  • 3/4 tsp baking powder
  • 2 cups (260g) all-purpose flour
  • 3.5 oz (100g) milk or dark chocolate chips
  • flaky salt/ fleur de sel/ maldon salt, for sprinkling
  • approx. 1/2 cup (8 tbsp) nutella

I absolutely LOVE salted caramel AND nutella. Putting the two together just seems like a perfect combination that I am dying to try out! 

 

Smores Fudge Bars

Ingredients:

  • 20 full graham crackers
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 12 tablespoons unsalted butter, melted
  • 2 cups semisweet chocolate chips
  • 1 (14 ounce) can sweetened condensed milk
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar
  • 3/4 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons vanilla extract

Smores are a treat that I love to enjoy year round. Making them into a delicious bar to eat at home sounds amazing and I can’t wait to try this one out. This recipe teaches us how to make the cracker topping and marshmallows from scratch too! 

Pumpkin Cheesecake Cupcakes with Salted Caramel Sauce

Ingredients:

  • 1 3/4 cup finely crushed graham crackers
  • 2 Tbsp granulated sugar
  • 6 Tbsp salted butter, melted
  • 1 cup packed light-brown sugar
  • 1/2 cup granulated sugar
  • 3 Tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 3 (8 oz) pkg cream cheese, softened well
  • 4 large eggs
  • 1 1/2 cups canned pumpkin puree
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream
  • 1 recipe homemade caramel sauce, recipe here
  • Coarse or flaked sea salt

With the fall season and sweater weather, I am a huge fan of pumpkin flavored everything, paired with cheesecake and salted caramel, this cupcake is just calling my name! 

Hot Chocolate Cupcakes

Ingredients:

  • 6 oz. (3/4 cup) unsalted butter
  • 13-1/2 oz. (3 cups) unbleached all-purpose flour (I recommend weighing it)
  • 3/4 cup canola oil
  • 4-1/2 oz. bittersweet chocolate, finely chopped
  • 3 cups granulated sugar
  • 2-1/4 oz. (3/4 cup) natural unsweetened cocoa powder
  • 3 large eggs, at room temperature
  • 3/4 cup buttermilk, at room temperature
  • 2 Tbs. pure vanilla extract
  • 2-1/2 tsp. baking soda
  • 1/2 tsp. kosher salt
  • 1 1/2 cups sugar
  • 2 tablespoons light corn syrup
  • 6 large egg whites
  • 1 teaspoon pure vanilla extract

These cute little cupcakes would be great for the holidays. With rich chocolate flavor and festive candy cane topping, these would be great as gifts or for holiday parties!
