Every collegiette knows that when you move out of your family’s house meaning freedom, independence, and more time to yourself. But what we sometimes forget is that we also lose luxury of our parents cooking and cleaning after us. Most of us were able to recieve great home cooked meals at home. Now that you’re out of the house you have to resort to your own cooking or even….the dining hall. The dining hall and atrium can be such a bore after a long semester and you will suddenly lose appetite from eating there so often. After a bit of research, I’ve found the best MICROWAVE FRIENDLY recipes. You read that right, microwave friendly. So all you readers out there that live in dorms, I’ve got the perfect recipes for you. Even if you live in an apartment, microwave recipes can really help on busy days or if you’re new to cooking. So here are my top 5 microwave recipes! 

5 Minute Microwave Homemade Mac & Cheese:

Sure you could just make some quick Easy Mac, but how about some homemade mac and cheese? All you’ll need is the following:

  • 1/2 pound cooked pasta of choice (we used small shells)
  • 2 cups shredded cheddar cheese
  • 1 cup whole milk
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Place all ingredients into a bowl, mix and microwave!

Fried Rice: 

Feeling Asian food? Try out this fried rice recipe you can make in the microwave! You will need the following:

  • 1 cup rice (I use long grain, Jasmine or Basmati)
  • 1 1/2 cups water
  • 1 cup chopped vegetables (fresh or frozen)
  • 1 medium chopped onion
  • 2 slices bacon, chopped
  • 1 tablespoon oil
  • 1 tablespoon tomato sauce (ketchup)
  • 1 tablespoon soy sauce

Combine ingredients and microwave!

Pita Pizza:

If you’re feeling a quick snack then this recipe would be great for you! This pita pizza is delicious and healthy as well! You will need the following:

  • 1 pita
  • 1/2 cup baby spinach
  • 1/4 cup sliced mushrooms
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grape tomatoes, sliced in half

Lay out your pita, make your pizza and microwave!

Healthy “Apple Pie”:

If you’re looking for something sweet, try out this healthy alternative to an apple pie! All you will need is the following:

  • 1 apple
  • Water
  • Cinnamon

Slice your apple, rinse with water, sprinkle cinnamon, microwave and enjoy!

3-Minute Microwave Fudge:

If you don’t mind being a bit unhealthy, then definitely try out this recipe. All you chocolate lovers out there, I have a microwave recipe for fudge! To make this you will need:

  • 2 packages (11.5 or 12 oz package) of choc chips (1 milk chocolate, 1 dark or semi sweet chocolate) i’ve also substituted the milk choc with andes mint chunks and it was delish!
  • 1 can of sweetened condensed milk (14 or 16 oz)
  • 3 tables spoons of butter

Combine all the ingredients and microwave!
