Fall is here and lately, I’ve been spending a lot of time in the kitchen. I’ve only really done a lot of baking around the winter holidays, but I’ve always wanted to try some different recipes for different occasions. I decided to compile a list of some tasty looking Halloween baking recipes, some that I’ve tried and some that I’d like to try, and maybe inspire others to get their baking on.

Halloween Cookie Sandwich

This recipe is super easy and only requires 3 ingredients. 

Here’s what you need:

  • Pillsbury Halloween Sugar Cookies
  • Icing
  • Sprinkles

Follow the instructions on the box for baking the cookies. Once they have cooled take two cookies and spread a moderate amount of icing on one of the cookies. Place the second cookie on top of the iced cookie. Once assembled, roll the cookie sandwich in your favorite spooky sprinkles. The sprinkles will stick to the icing making your cookie sandwich super cute!

Pumpkin Spice Cookies

If you’re a pumpkin fan then these cookies are for you!

Here’s what you need:

  • Cookie Ingredients:
    • 1 cup of softened butter
    • 1 cup of sugar
    • 1 cup of pumpkin
    • 1 egg
    • 2 cups of flour
    • 1 tsp of baking powder
    • 1 tsp of baking soda
    • 1 tsp of cinnamon
  • Icing ingredients
    • 3 tbsp of butter
    • 1/4 cup of milk
    • 1 1/2 cups of brown sugar
    • 1 cup powdered sugar

Start by adding the butter, sugar, pumpkin, and egg into a bowl and creaming it together. In a separate bowl add your flour, baking powder, baking soda, and cinnamon. Whisk the dry ingredients together and then mix into the first mixture of wet ingredients. Scoop out your dough onto a baking sheet and put it in the oven at 350 degrees for about 15 minutes. While the cookies are cooling, start to prepare your icing. Add your milk, brown sugar, and 3tbsp of butter to a pot and bring it to a low boil. Take your mixture off the heat, add your powdered sugar, and mix until smooth. Work quickly when icing the cookies because it dries fast.

Starbucks Pumpkin Cream Cheese Muffins

If you haven’t had the chance to try these muffins at Starbucks then you are missing out!

Here’s what you’ll need:

  • Muffin Ingredients
    • 1/3 cup of whole wheat flour
    • 3/4 cup of all-purpose flour
    • 1/2 cup of white sugar
    • 1/2 tsp of baking soda
    • 1/2 tsp of baking powder
    • 1 tsp of pumpkin pie spice
    • 1/2 cup of pumpkin puree
    • 1/3 cup of oil
    • 1/2 tsp of vanilla extract
    • 1/2 cup of milk
  • Filling Ingredients
    • 4 oz of cream cheese, softened
    • 1 tbsp of milk
    • 1 1/2 tbsp of sugar
    • 1/2 tsp of vanilla extract
    • 1 1/2 tbsp of flour
  • Topping
    • 2 tbsp crushed pumpkin seeds

Whisk together all the wet ingredients separate from the dry ingredients. In a separate bowl, whisk together the dry ingredients. Line a cupcake tray with liners and pour your batter in. Combine all the ingredients of the filling together. Put the filling in a piping bag, or a Ziploc bag with a small hole cut in the corner and pipe the filling into the center of the batter. Top the muffins with pumpkin seeds and then bake at 350 degrees for 16-18 minutes.
