Sweet Treats for your Sweetie!

Looking for a cheap and easy gift for your special someone? Instead of a box of chocolates or bouquet of roses surprise your love with Martha Stewart’s delicious mini Oreo cheesecakes.

 

Ingredients: 

30 whole Oreo cookies (I used double stuffed just for some extra sweetness)

12 crushed or chopped into medium size pieces (I used 14 for extra crunch)

2 pounds of Cream cheese

1 cup of Granulated sugar

1 tsp Vanilla extract

4 Eggs (large & lightly beaten)

1 cup of Sour Cream

Salt (a pinch)

 

Preheat oven to 275 degrees. Arrange the liners in the bottom of a cupcake pan and place one Oreo cookie inside each. Using a mixer, blend the cream cheese for around 2 minutes until well blended. If you are like me and don’t have a mixer, don’t worry. You can still indulge in these mouth watering Valentine’s Day treats! After a failed attempt at using my blender for mixing I found that 30-second intervals in the microwave and hand mixing with a spatula worked like a charm. Add the sugar in gradually, mix until smooth and add vanilla extract. While on slow speed, add the beaten egg until well combined. Mix in the sour cream and blend in salt until the mixture is creamy. Finally, fold in the chopped Oreos with a spatula. Using an ice cream scooper, spoon in the mixture into the cupcake tins and bake for around 22 minutes or until the filling is set. Place the pans on a wire rack and refrigerate for at least 4 hours or overnight and enjoy!
