Running around campus Monday through Friday can be tough, and finding time to cook
healthy and delicious meals during this time can be a doozy. Here is a perfect and filling
combination for a quick, on-the-go lunch. It may seem as if there are a lot of ingredients
in this recipe, but it’s simple to prepare.
Ingredients:
• 1 wheat tortilla
• Spinach
• 1 small bell pepper
• 1 scallion
• ¼ an avocado
• 1 tablespoon feta cheese
• 1 teaspoon olive oil
Place the tortilla on a clean plate. Add as much spinach as you’d like to the center of the
tortilla. Cut the bell pepper, scallion and avocado into small pieces and place them on top
of the spinach. Drizzle olive oil over the combination and sprinkle the feta on top. Wrap
up the tortilla and enjoy for lunch or dinner. Make this into a breakfast tortilla by adding
a scrambled egg!
