Take Back Pumpkin Spice

October is here. The leaves are turning; the air is becoming crisp; and the white girls are clomping around in their Ugg boots. Everyone makes fun of these girls with their iPhones, leggings, and Starbucks cups full of pumpkin spice lattes. While pumpkin spice is a defining characteristic of the fall season, this fall flavor needs to be broadened. This wonderful taste should not be restricted only to lattes.

So, kick off your Ugg boots and North Face/Patagonia jacket, light your pumpkin candle, and change into your fuzzy pajamas and slippers. Start perusing for a movie on Netflix (preferably a rom-com) while you pick up some ingredients and pans. Throw your PSL to the wind and try these new recipes.

Pumpkin Spice Pancakes



2 scoops protein powder (chocolate or vanilla)

1 cup pumpkin canned pumpkin puree (not pumpkin pie filling)

1 teaspoon cinnamon

1 teaspoon baking powder

4 egg whites

1 cup oats

2 tablespoons milk

1 tablespoon honey (or 3-4 teaspoons of sweetener of your choice)

Pumpkin Spice Cupcakes with Cream Cheese Frosting

Batter Ingredients:

3/4 cup butter, softened

 2-1/2 cups sugar

 3 eggs

 1 can (15 ounces) solid-pack pumpkin

 2-1/3 cups all-purpose flour

 1 tablespoon pumpkin pie spice

 1 teaspoon baking powder

 1 teaspoon ground cinnamon

 3/4 teaspoon salt

 1/2 teaspoon baking soda

 1/2 teaspoon ground ginger

 1 cup buttermilk


Frosting Ingredients:

 1 package (8 ounces) cream cheese, softened

 1/2 cup butter, softened

 4 cups confectioners' sugar

 1 teaspoon vanilla extract

 2 teaspoons ground cinnamon

Pumpkin Spice Puppy Chow


1 cup white chocolate chips (or any kind of chocolate chips)

1/4 cup (half stick) butter

1/2 cup peanut butter or Biscoff spread (cookie butter)

2 tsp. pumpkin pie spice
