Balancing the responsibilities of healthy eating, grocery shopping and meal planning are the ultimate college struggle. HC Marist has cultivated a list of five recipes to make next week’s menu simple and delicious.

Monday: Shrimp Salad Stuffed Avocados

This mouth-watering shrimp salad comes in at #1 for a reason- it combines two amazing kitchen staples, shrimp and avocado. It’s definitely best to start the week on a high note, and this recipe requires little to no actual cooking.


Tuesday: Greek Tortellini Pasta Salad

This refreshing pasta salad will make your Tuesday a little cooler as the final days of summer wind down. The combination of flavors and hint of Greek ingredients make this dish out of this world.



Wednesday: Spinach Artichoke Lasagna Roll Ups

Although this recipe requires *some* effort, the end product is definitely worth it. The warm cheesy taste of lasagna couples nicely with spinach artichoke. (Warning: the recipe video will have your mouth watering).


Thursday: Healthy Cauliflower Pizza

Thursday calls for some variation of pizza. Feel guilt-free and satisfied with this delicious, cauliflower pie of goodness.


Friday: Southwestern Turkey Burgers

Friday calls for some celebration, which usually includes avocado. Put a healthy spin on burger night and celebrate the weekend with this festive and delicious turkey burger.
